Recipes reflecting Italian, Spanish, Portuguese,  with Chef Melissa's twist.

Menus are customized with starter Tapas and Petiscos and progressing through dessert with smaller portions per person so you can try more items.  




Chef's Starter Tapas Platter

Make it easy on yourself and choose a Chef Inspired starter platter with 4-5 Tapas to share.   Specifically chosen by Chef Melissa to pair with your larger plate choices. You can always edit the menu at the end just in case with your own choices 

Or decide for yourself and create your own. 

Gulf Ahi Tuna Tartare

Fresh pineapple, coriander and cherry blossom soy

Local Clams à Bulhão Pato Style

Portuguese Vinho Verde, lemon, garlic and coriander

Slow Roasted Tomato or Wild Mushroom Crostini

Burrata cheese and fresh basil -white truffle oil  

Scallop Crudo

Orange Zest and Lime juice, Jalapeño and Coriander

Local Gulf Shrimp - Gambas à la Guilho

Garlic, Ginger and Red chilies  in Brandy Shrimp Sauce

Grilled Calamari Steak (Cuttlefish)

Fresh Lemon and Oregano, Calibrean Chili, Lentrisca Olive Oil,  paired with antipasto salad 

Flamenquines Cordobeses - Andalusian Fried Pork Rolls

Pork Tenderloin scaloppine, serrano ham, gruyere cheese, rolled, breaded, fried and sliced into bites 

Eggplant Forno

Marscapone, ricotta and roasted garlic.  Pistachio, golden raisin, castelvetrano olive  

PIri Piri Roasted Chicken Bites

Bite sized cuts of thigh meat, grilled with  Piri PIri Pepper sauce and served with cucumber yogurt sauce

Fresh Seafood simmered in a rich tomato white wine sauce and rice

About this Menu

Inspired by the Cuisine of Southern Europe, you can choose up to 7 items  (recommended) to share with your family and friends.  Chef will customize your menu in anyway requested or suggested depending on your choices.  This menu is a lot of fun and the recipes are fine tuned to fit all palettes. Even an American palette!!

Arborio Rice  simmered in Spinach broth with asparagus, broccolini and peas, parmesan and truffle
